Lavashak is one of the most beloved Iranian snacks, made from the perfect blend of sour, sweet, and natural fruit flavors. Traditionally, lavashak was prepared at home, but today, thanks to technological advancements, it is produced industrially under strict hygienic standards.
In this article, we’ll explore every stage of lavashak production — from fresh fruit to the final packaged product.
Selection and Washing of Fruits
The first step is selecting fresh, ripe fruits. Typically, fruits such as plums, apricots, pomegranates, apples, kiwis, and green plums are used in lavashak production.
Once delivered to the factory, the fruits are thoroughly washed in industrial machines to remove dirt, leaves, and debris, ensuring a pure and hygienic final product.
Coring and Crushing
In this stage, fruits are pitted (for example, plums or apricots) and then crushed to prepare them for cooking. This step plays a key role in achieving a smooth and uniform lavashak texture.
Cooking and Pureeing
The crushed fruits are cooked in special steam kettles until they reach a puree-like consistency. At this point, a small amount of sugar or salt may be added to balance the flavor.
The cooking time depends on the fruit type and its water content.
Filtering and Homogenizing
The obtained puree is passed through fine filters to remove peels and seeds. It is then transferred to mixers to achieve a perfectly smooth and uniform texture — this final mixture is known as lavashak puree.
Spreading and Drying
The lavashak puree is spread evenly on large trays or special plastic sheets, usually at a thickness of 2 to 5 millimeters.
Next, the trays are placed into drying tunnels where moisture is removed at controlled temperatures. In modern factories, this process is fully hygienic and done without direct sunlight.
Cutting and Shaping
Once dried, the lavashak sheets are sent to cutting machines and shaped into various sizes — sheet, strip, or bite-sized pieces. At this stage, natural flavorings or mixed fruit combinations can also be added.
Packaging
Finally, the cut lavashak pieces are automatically packed by industrial packaging machines. Packaging materials are typically made of polyethylene or multilayer films to prevent moisture and contamination.
Each package is labeled with production and expiration dates, ingredients, and brand information.
Storage and Distribution
Finished products are stored in temperature-controlled environments before being distributed to the market. Maintaining the cold chain during this stage helps preserve the flavor and quality of lavashak.
Conclusion
Lavashak production is a blend of art and science. From carefully selecting fruits to precise packaging, each step requires attention, quality control, and hygiene.
The result is a naturally flavored, authentic Iranian delicacy that has won the hearts of consumers not only in Iran but also across the global market.
